The cherries are first picked and stored for 12 hours, increasing pigment transfer – this both slightly changes the colour of the seeds, as well increasing florality during this resting period before fermentation. They are then depulped and fermented for 24-30 hours before being washed and then dried in a parabolic dryer for 3 weeks. This is the first time that Fjord has purchased a coffee that was mechanically dried, as opposed to sun dried on raised beds. fjord-coffee.de
